Firstly, peel the potatoes and slice them thinly into rings. Dice the onion finely. Pour enough olive oil into a deep pan to fry the chopped potatoes and onions and heat it up. Then add the potatoes and onions. Fry the potatoes and onions until they soften and turn golden brown, then transfer them to a plate.
Preparing the Eggs
In a mixing bowl, beat the eggs and season with salt and pepper. Add the fried potatoes and onions to the beaten eggs and mix well.
Cooking the Omelette
Heat a non-stick frying pan and pour the mixture into the pan. Cook the omelette on medium heat until the edges start to set. Then, place a plate on top of the pan and flip it to cook the other side.
Serving
Slide the omelette back into the pan to cook the other side. Once it’s cooked, slide it onto a plate and serve hot or cold, cut into slices.
